We included carcass characteristics in our balanced trait selection in the mid-90's. Then we incorporated carcass ultrasound and actual carcass data over a decade ago. This approach has allowed us to become a breed leader in carcass quality while maintaining all of the core Gelbvieh characteristics to produce cattle that will enhance any herd.
